About Premium Phoenix Dan Cong Tong Tian Xiang

Phoenix Dan Cong "Tong Tian Xiang" is one of the top ten fragrance types of Phoenix Dan Cong teas. This variety was originally selected from a single plant, a natural hybrid descendant of the Shui Xian cultivar group from the Wu Dong Mountain. It is one of the most renowned varieties within the Phoenix Dan Cong family, known for its distinctive ginger flower aroma. The finished tea carries a natural spicy ginger flavor, which has earned it the nickname "Jiang Mu Xiang". Due to its strong fragrance that fills the room during brewing, it was later named "Tong Tian Xiang," which means "Heaven-Penetrating Fragrance."

The tea trees of Tong Tian Xiang grow at an altitude of over 1100 meters on Wu Dong Mountain, where the unique mountain terroir imparts a distinct "mountain charm" to the tea. This tea is incredibly durable in brewing, with a rich and full-bodied aroma. Only harvested once a year during the spring season, its production is limited, making it a tea truly worth savouring.

Its tea leaves are long and slim, while they become large and stalky after brewing. The tea soup is in bright yellow. The tea soup is bright. This Tong Tian Xiang tea has a fresh and sweet taste with a hint of ginger flower aroma. It induces salivation, and the aftertaste is strong and lingers pleasantly. As it comes from high sea level tea trees, it has an obvious charming taste of high mountain old bush tree.

Among many teawares, we recommend you use (Yixing) Clay Teapot or Gaiwan for brewing this characteristic Chinese tea. The recommended clay teapot to brew this Oolong tea in Gongfu style should be tiny, with the volume around 100 – 200ml. Or you can also brew it using normal-sized Teapot, but with more tea leaves.

For simple glass vessel/teapot style:

Use 100°C hot water to infuse tea leaves for around 1-2 minutes. Re-steepable for around 5-6 times. (Adjustable by personal taste).

For Gongfu Style:

  • Warm the Gaiwan/tiny teapot with hot water; discard the water afterward
  • Add 1g Oolong tea for every 20ml – 30ml of water (recommend 8g tea leaves for a cup, adjust by personal taste)
  • Pour hot water (100 °C) into the clay teapot / Gaiwan, tilt it, slowly rotating it for two circles and quickly discard the water (this step is for waking up tea leaves and stimulating the special aroma of the oolong tea)
  • Refill clay teapot/Gaiwan with hot water
  • Infuse the tea for around 2-3s for the first brew, less than 5s for between the second and the tenth brews. After that, allow an extra 5-8s infusion time.
  • Pour the steeped tea into a serving cup and divided into small teacups and serve
  • Rebrew-able around 20 times

Chao Zhou

This premium grade Phoenix Dan Cong comes from the Wu Dong Village, Chao Zhou City, Guang Dong Province. The trees there are lush, surrounded by multiple streams through the valley. The mountain is also surrounded by clouds and mists all year round. The weather there is humid, and the temperature difference between day and night is large. The rainfall is abundant while the sunshine hours are short. The soil there is thick and fertile and contains rich organic substances and trace elements. These substances and elements are conducive to the formation of tea polyphenols and aromatic substances. All these, including the natural environment advantages mentioned above, provide superior growing conditions for the tea trees of the tea.

Picking Tea

The name ‘Dan Cong’ means the single shrub of tea cultivars. It is selected from the high-quality Phoenix Shuixuan Species Group, cultivated and picked individually. There are many sub-cultivars under the group of Phoenix Shuixian cultivars, and each has its own characteristic in terms of the leaf and shape of the tea tree.

Based on the different quality of the raw materials generated from Phoenix Shuixuan Species Group and the different levels or sophistication of production processes, the quality of its sub-cultivars can be sorted, from high to low, as Phoenix Dan Cong, Phoenix Lang Cai, and Phoenix Shuixian. In simple words, Phoenix Dan Cong is the upgraded version of Phoenix Shuixian.

Phoenix Dan Cong has dozens of strains and types. According to the introduction of Chaozhou Phoenix tea tree resources, Phoenix tea has 79 kinds of different natural flower flavours, 12 kinds of natural fruit aroma and 16 kinds of other fragrances.

Phoenix Dan Cong is picked before or after the Pure Brightness (April 4th, 5th, or 6th). The yearly yield of this rare Dan Cong is very limited because the picking time is super shot – only around 3-5 days in a year.
