白牡丹是著名的白茶之一，主产于中国福建省的南平市政和县、松溪县、建阳市和宁德市福鼎市，是中国福建省历史名茶。白牡丹是由一芽二叶制做而成的。其绿叶夹银白色毫心，形似花朵，冲泡后绿叶托着嫩芽，宛如蓓蕾初放。 与白毫银针相比，白牡丹的采摘周期长一些，大约有15天时间。其采摘时间长，意味着产量更高。不像白毫银针似的贵如金，白牡丹的价格更平易近人。 白牡丹是一芽二叶，叶子隆起呈波纹状，边缘后垂微卷，叶子背面白毫满布。冲泡后，两片叶子托着鲜嫩的芽头，就好像初放的牡丹，出人意料的美丽动人。 白牡丹滋味清甜醇爽、毫香足，轻啜一口有明显的鲜爽感。品质好的白牡丹所带的回甘明显、清甜，并伴有毫香、花香、青草香，滋味变化明显。

原材料：与白毫银针全部由芽头制作而成的不同，白牡丹是由一芽二叶制做而成的。其绿叶夹银白色毫心，形似花朵，冲泡后绿叶托着嫩芽，宛如蓓蕾初放。与白毫银针相比，白牡丹是继白毫银针后一年之内在茶树上采摘的第二种茶叶。 采摘：到了清明节，气温升高，白茶树的生长，进入第二个阶段。芽头上的叶片开始渐渐剥离，生长。有的芽头逐渐出现一芽一二叶的外观特征，此时，为采摘白牡丹的时间。与白毫银针相比，白牡丹的采摘周期长一些，大约有15天时间。 采摘时间长，意味着产量更高。不像白毫银针似的贵如金，白牡丹的价格更平易近人。而且随着白茶叶片的生长，一些芳香烃物质积累更为丰富，也是因为如此，白牡丹的香气层次，更显多变。 生产时间：春季
