白牡丹是著名的白茶之一，主產於中國福建省的南平市政和縣、松溪縣、建陽市和寧德市福鼎市，是中國福建省歷史名茶。白牡丹是由一芽二葉製做而成的。其綠葉夾銀白色毫心，形似花朵，沖泡後綠葉托著嫩芽，宛如蓓蕾初放。 與白毫銀針相比，白牡丹的採摘週期長一些，大約有15天時間。其採摘時間長，意味著產量更高。不像白毫銀針似的貴如金，白牡丹的價格更平易近人。 白牡丹是一芽二葉，葉子隆起呈波紋狀，邊緣後垂微捲，葉子背面白毫滿佈。沖泡後，兩片葉子托著鮮嫩的芽頭，就好像初放的牡丹，出人意料的美麗動人。 白牡丹滋味清甜醇爽、毫香足，輕啜一口有明顯的鮮爽感。品質好的白牡丹所帶的回甘明顯、清甜，並伴有毫香、花香、青草香，滋味變化明顯。

原材料：與白毫銀針全部由芽頭製作而成的不同，白牡丹是由一芽二葉製做而成的。其綠葉夾銀白色毫心，形似花朵，沖泡後綠葉托著嫩芽，宛如蓓蕾初放。與白毫銀針相比，白牡丹是繼白毫銀針後一年之內在茶樹上採摘的第二種茶葉。 採摘：到了清明節，氣溫升高，白茶樹的生長，進入第二個階段。芽頭上的葉片開始漸漸剝離，生長。有的芽頭逐漸出現一芽一二葉的外觀特徵，此時，為採摘白牡丹的時間。與白毫銀針相比，白牡丹的採摘週期長一些，大約有15天時間。 採摘時間長，意味著產量更高。不像白毫銀針似的貴如金，白牡丹的價格更平易近人。而且隨著白茶葉片的生長，一些芳香烴物質積累更為豐富，也是因為如此，白牡丹的香氣層次，更顯多變。 生產時間：春季
